Fantasy Christmas Fudge

This is an original fudge recipe that is very popular and tasty. This version of the recipe makes about 117 small bars.

Ingredients you will need:

3 Cups of Sugar

3/4 cup of Margarine or Butter

2/3 cup of Evaporated Milk

1 Package (12 oz) of Semi-Sweet Chocolate Chips

1 Jar (7 oz) of Kraft Marshmallow Crème

1 Cup of Chopped Nuts of your choice

1 teaspoon of pure Vanilla Extract

Traditional Preparation:

Combine the margarine, milk and sugar in a heavy 2 and 1/2 quart saucepan. Bring the mixture to a full boil, stirring non-stop. Allow it to boil for 5 minutes over medium-high heat. Continue stirring. Remove the pan from the heat, and stir in the chocolate until it is fully melted. Next, add the marshmallow crème, vanilla and nuts. Beat the mixture until it is well blended. Pour the mixture into a greased baking pan (13 x 9) and allow it to cool. After the fudge has cooled, cut it into 1-inch squares.

Microwave Preparation:

Place the margarine in a microwave safe bowl that is 4 quarts, and heat on high for one minute, or until melted. Add the milk and sugar, and then mix well. Next, microwave the mixture on High for about 5 minutes, or until it begins to boil. Stir the mixture after 3 minutes in the microwave. Mix well and be sure to scrape the bowl. Continue to microwave the mixture on High for another 5 and 1/2 minutes; stirring again after 3 minutes. Then you will stir in the chocolate chips until they are melted. Add the remaining ingredients to the mixture and combine well. Pour the batter into a greased baking pan (13 x 9) and allow the fudge to cool to room temperature. Once it is cooled, cut it into small squares and it should make 3 pounds.


Traditional Pecan Tarts

These small cookies will remind you of mini pecan pies, and they are so good you cannot eat just one!

Ingredients you will need:

3 ounces of softened cream cheese

1 tablespoon + 1/2 cup of softened butter

1 cup of sifted flour

1 egg

3/4 cup of firmly packed brown sugar

1 teaspoon of pure vanilla extract

Small dash of salt

2/3 cup of pecans, chopped

Preparation Method:

You will begin by preheating the oven to 325 degrees F. Combine cream cheese, flour and 1/2 cup of butter.  Mix well, cover and chill for one hour. Divide the dough into 24 small balls and press into the sides and bottom of two miniature muffin pans that are not greased.

Next, combine vanilla, brown sugar, egg, salt and the remainder of the butter. Beat the mixture smooth. Next, sprinkle roughly 1/3 cup of pecans evenly into each of the 24 shells. Also divide the egg mixture evenly among all 24 tart cups, as you pour it over the pecans. Finally, sprinkle with the remaining pecans, and bake 20 to 25 minutes or until each pastry is golden brown.


Pistachio Christmas Ribbon Bars

These are very festive bars that have crumble topping, shortbread crust, red jam filling and chopped pistachios. The following recipe will make about 36 bars.

Ingredients you will need:

1/2 pound of unsalted margarine or butter that is softened

1 cup of granulated sugar

1 large egg

2 cups of all-purpose flour

2/3 cup of chopped pistachios

1/8 teaspoon of salt (do not include if your nuts are salted)

1/2 to 2/3 cup of strawberry or raspberry jam

Preparation Method:

Begin by preheating your oven to 325 degrees F. Then you will combine the egg, butter and sugar before beating until well blended. Fold in the salt and flour. Spread about 1/2 of the dough into a 9-inch square pan. Bake for about 10 minutes, and then remove it from the oven. Spread jam all over the crust, up until about 1/2 inch from the edge. Add the pistachios to the rest of the dough. Then, you will begin to drop spoonfuls of jam over the dough to cover. Bake for 35 minutes or until the top is lightly browned; allow the bars to cool and then cut into squares.


Oatmeal Raisin Spice Cookies in a Jar

The following recipe made it to our list because it is an easy and thoughtful gift you can give to practically anyone, or enjoy yourself as you are baking Christmas cookies with your family. The following ingredients will make about 36 cookies.

Ingredients you will need:

3/4 cup of brown sugar, packed

1/2 cup of white sugar

3/4 cup of raisins

2 cups of rolled oats

1 cup of all-purpose flour

1/2 teaspoon of ground nutmeg

1 teaspoon of ground cinnamon

1/2 teaspoon of salt

1 teaspoon of baking soda

Preparation Method:

Mix the flour, nutmeg, salt, baking soda and cinnamon together, and set aside. You will then begin to layer the ingredients in the given order inside a wide-mouth 1 quart canning jar. Keep in mind that the ingredients will fit tightly, so make sure to pack each layer firmly down before adding flour into the jar.

Attach the following instructions to each jar:

Oatmeal Raisin Spice Cookies

1. Empty the entire jar of cookie mixture into a large mixing bowl. Use your hands to blend the mixture thoroughly.

2. Add 3/4 cup of softened margarine or butter, then stir in one slightly beaten egg and 1 teaspoon of vanilla.

3. Stir until the mixture is blended completely. You may need to finish this task with your hands.

4. Shape the mixture into small balls, the size of walnuts. Place each dough ball on parchment-lined cookie sheets 2-inches apart. DO NOT PLACE THEM ON WAX PAPER!

5. Bake the cookies at 350 degrees F for between 11 and 13 minutes, or until the edges are golden brown. Allow to cool for 5 minutes before moving them to wire racks to finish cooling.


Christmas Rum Balls

These tasty chocolate, rum balls have become a staple for a United States Christmas. These are among the most popular Christmas cookies each year. The following recipe makes about 3 dozen.

Ingredients you will need:

1 cup of semisweet chocolate chips

1/2 cup of rum

1/4 cup of corn syrup

3 cups of plain vanilla wafers, crushed

1/2 cup of confectioners’ sugar

1 and 1/2 cups of walnuts, ground

Preparation Method:

Use the microwave or double boiler to melt the chocolate chips. Make sure you stir occasionally until they are smooth. Remove the chips from the heat, and pour in the rum. Next, you will add the corn syrup. Then inside of a medium bowl you will toss together the ground walnuts and crushed vanilla wafers. Spread the chocolate mix over the crumbs inside the bowl, and blend well using your hands. Shape the dough into 1-inch balls. You then roll each cookie in confectioners’ sugar to coat, and store in an airtight container for a minimum of one week before serving.
